Easy Pork Chop with Caramelized Onion

Now that the pigs are back from camp and in their new owners freezers, I want to make sure everyone has this go-to recipe in their back pocket. My wife didn’t used to care much for pork chops (I know right, who is this person?) but this recipe has her scarfing them down and looking for more.

Pair this with pretty much any potato or rice and you are all set.

  1. Season chops with seasoning salt and black pepper. I do both sides and rub it in good right at the beginning.
  2. In a skillet or electric frying pan, heat oil at medium heat.
  3. Brown chops on both sides. Then add your onions and water.
  4. Cover, reduce heat and simmer for 20 minutes.
  5. Flip your chops, cover and cook until the water is gone and your onions are soft and light brown.
  6. Remove from pan and serve immediately - topped with onions.

Best Goddam Zucchini Bread

We have an abundance of zucchini on the farm this year. I mean seriously, more than we know what to do with. We BBQ some, I’ve sliced and frozen some for future consumption, and we’ve even stuffed and baked some. Yet still, here I sit with a counter covered in zucchini and plants still producing feverishly.

Freezing is all well and good, but really, the best way to “preserve” zucchini is in bread form. And by preserve, I mean eat 2 loaves in a day.

Having never made zucchini bread before, I had to go searching around for a recipe. Good news – first one I tried is the be all and end all of zucchini recipes.

I would have showed pictures but I didn’t take any and the loaves are long gone already. I will add some in next time.

  1. Grease up, or spray down 2 loaf pans. 8x4 works - 9x5 did too. Preheat oven to 325
  2. Sift flour, sale, baking soda, baking powder and cinnamon together. (You will add this to the liquids later so choose your own accordingly)
  3. Beat eggs, oil, vanilla, and sugar together in a bowl. This should be your bigger bowl.
  4. Add your bowl of sifted goodness into your wet bowl and beat it. A lot.
  5. Stir in zucchini and walnuts. Mix. Mix. Mix some more. Really get down to the bottom of your bowl and make sure you've mixed it really well. (The mixture is thick and sticky - its easy to not mix it well)
  6. Bake for 60 minutes (ovens vary so start checking around 40 mins by inserting a toothpick - when it comes out clean, it's ready).
  7. Cool in pan for 20 minutes then pop it out and leave it to cool on a rack.
