  1. Grease up, or spray down 2 loaf pans. 8x4 works - 9x5 did too. Preheat oven to 325
  2. Sift flour, sale, baking soda, baking powder and cinnamon together. (You will add this to the liquids later so choose your own accordingly)
  3. Beat eggs, oil, vanilla, and sugar together in a bowl. This should be your bigger bowl.
  4. Add your bowl of sifted goodness into your wet bowl and beat it. A lot.
  5. Stir in zucchini and walnuts. Mix. Mix. Mix some more. Really get down to the bottom of your bowl and make sure you've mixed it really well. (The mixture is thick and sticky - its easy to not mix it well)
  6. Bake for 60 minutes (ovens vary so start checking around 40 mins by inserting a toothpick - when it comes out clean, it's ready).
  7. Cool in pan for 20 minutes then pop it out and leave it to cool on a rack.
